Alternative Barbeque Sauce

Try this yummy, healthy twist on a summer favorite!
Alternative Barbeque Sauce
makes 6 ½ cups
1/3 cup high oleic safflower oil
3 small onions diced finely (3 cups)
6 garlic cloves, minced (3 tablespoons)
1 tablespoon plus 2 teaspoons coarse salt
1 ½ teaspoons freshly ground pepper
1 ½ teaspoons ancho chili powder
or regular chili pepper
½ teaspoon whole coriander seeds, toasted and ground
½ cup unsullfered dark strap molasses
½ cup coconut sugar
4 cups crushed organic tomatoes or 2 28 ounce cans
¾ cup apple cider vinegar
¼ cup organic Eden Foods brown rice vinegar*
2 tablespoons Braggs Aminos**
2 cups water
Directions:
Heat oil in a medium pot over medium heat.
Add chopped onions and minced garlic,
Saute until translucent and tender, about 10 minutes.
Add 1 teaspoon salt, ½ teaspoon pepper, chili powder, coriander,
cumin, molasses, and coconut sugar.
Stir and simmer for three minutes.
Add tomatoes and apple cider vinegar, bringing to a simmer..
Reduce heat to medium low and simmer gently, stirring occasionally,
until mixture is thick and dark, 2 ½-3 hours.
Puree sauce in blender. Add remaining 4 teaspoons salt,
remaining teaspoon of pepper, apple cider vinegar, Bragg's Aminos;
puree. Add water slowly through the top.
